Ingredients

Directions

  1. In a large skillet, melt the bacon grease over medium heat.
  2. Add the meat (beef, pork, or chicken), diced onion, minced garlic, chopped tomatoes, green chiles, and diced potatoes to the skillet.
  3. Sauté the mixture, stirring occasionally, until the meat is cooked through and the onions are softened.
  4. Stir in the salt, dried oregano, chili powder, and minced cilantro.
  5. Reduce heat and simmer the filling for 2-3 minutes to allow the flavors to meld.
  6. Warm the flour tortillas slightly to make them pliable and prevent cracking.
  7. Place a scant 1/2 cup of the meat filling onto the center of each tortilla.
  8. Fold the sides of the tortilla inward, then roll it up tightly like a burrito to seal the filling inside.
  9. Heat oil to 360-375ðF (191ðC) in a deep pot or fryer.
  10. Carefully place the chimichangas seam-side down into the hot oil.
  11. Fry until the bottom side is crispy and golden brown, then flip to brown the other side.
  12. Remove chimichangas from oil and drain briefly on a paper towel.
  13. Serve immediately, topped with shredded cheese, a dollop of sour cream, salsa, shredded lettuce, and chopped tomatoes.
