Ingredients

Directions

  1. Wash and trim the ends off the green beans.
  2. Cut the beans crosswise into 1/4 - 1/3 inch rounds.
  3. Peel the garlic cloves and chop them finely.
  4. Cut the chilies crosswise into very thin slices.
  5. Put the vegetable oil in a wok and set it over medium-high heat.
  6. When the oil is hot, add the garlic and green chilies.
  7. Stir and fry until the garlic turns golden, then add the ground pork.
  8. Stir and fry, breaking up any lumps, until the pork has lost its raw look.
  9. Add the beans, paprika, brown sugar, fish sauce, and water.
  10. Stir well and cook on medium-high heat for about 8-10 minutes, or until the beans are tender and most of the water has been absorbed.

Note

The recipe lists 10 oz of vegetable oil, which is a very large amount for stir-frying. Typically, 2-3 tablespoons are sufficient. Adjust oil quantity to your preference for a healthier dish.

The original ingredient list specifies 1/2 tsp of ground pork, which is likely a typo for 1/2 lb (approx. 8 oz). Use 1/2 lb of ground pork for a proper main course serving.

For less heat, remove the seeds and white ribs from the chilies before slicing.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a wok or skillet to maintain texture.
