Description

These Chimichangas Supreme offer a comforting twist on classic Mexican street food, featuring beef that is slowly simmered until fork-tender and then shredded into a rich, aromatic filling. The secret lies in the braising process, which infuses the meat with garlic, pepper, and fresh tomatoes, creating deep, complex flavors that contrast beautifully with the crunch of the deep-fried tortilla. The addition of green chiles and a routh-thickened sauce ensures every bite is moist and satisfying. This hearty dish is perfect for family dinners or casual gatherings where you want to serve something substantial yet approachable. Its a labor of love that rewards you with crispy edges and a steamy, savory center that pairs wonderfully with guacamole, sour cream, or a simple side salad.

Ingredients

Directions

  1. Cut the lean beef into 4 large chunks.
  2. Place the beef in a large 5 to 6-quart pot and add enough water to cover completely.
  3. Bring the water to a boil, then skim off any foam or impurities from the surface.
  4. Add the salt, pepper, and garlic powder to the pot.
  5. Reduce heat and simmer gently until the beef is tender, approximately 1.5 to 2 hours.
  6. Drain the beef, reserving exactly 1/2 cup of the cooking broth.
  7. Allow the beef to cool slightly, then shred it into bite-sized pieces.
  8. Chop 2 of the fresh tomatoes; reserve the remaining 2 for garnish or other use if desired.
  9. Melt the shortening in a skillet over medium heat.
  10. Add the chopped onion and bell pepper, sauting until soft and translucent.
  11. Sprinkle the flour over the vegetables, whisking constantly to eliminate lumps, and cook for 2 minutes.
  12. Stir in the shredded beef, reserved broth, chopped tomatoes, and canned green chiles.
  13. Simmer the mixture for 15 minutes until the sauce thickens slightly.
  14. Lay out 4 flour tortillas and place about 1/2 cup of the meat mixture in a line down the center of each.
  15. Fold the ends over by 1 to 2 inches, then fold one side over the filling and roll up tightly.
  16. Secure each chimichanga with a toothpick to prevent unraveling.
  17. Deep fry in oil heated to 400F (204C) until golden brown and crispy, then drain on paper towels.
