Strawberry White Chocolate Mousse Tart
Description
This stunning Strawberry White Chocolate Mousse Tart combines a buttery, orange-kissed shortbread crust with a light, airy white chocolate mousse. The rich, creamy filling is subtly infused with Grand Marnier, balancing the sweetness of the chocolate. Topped with artfully fanned fresh strawberries and a glossy glaze made from reduced strawberry jam and liqueur, this dessert is as beautiful as it is delicious. It’s the perfect centerpiece for spring gatherings, romantic dinners, or any special occasion where you want to impress guests with a professional-looking finish.Directions
-
In a large bowl, mix flour, brown sugar, orange peel, and salt.
-
Add chilled butter pieces and cut into the dry mixture until it resembles fine meal.
-
In a small bowl, blend orange juice, egg yolk, and vanilla extract.
-
Add the juice mixture to the dry ingredients and mix until a cohesive dough ball forms.
-
Gather dough into a ball and flatten into a roughly 12-inch round.
-
Position rack in center of oven and preheat to 375 degrees F (191°C).
-
Roll dough out between sheets of plastic wrap to 1/8-inch thickness.
-
Trim dough to an 11-inch circle using a tart pan as a guide.
-
Remove top plastic wrap and invert dough into a 10-inch round springform pan with a removable bottom.
-
Remove remaining plastic wrap and press dough into the bottom and up the sides of the pan; crimp top edges.
-
Freeze tart shell for 15 minutes.
-
Line tart shell with aluminum foil and weight with pie weights or dried beans.
-
Bake until sides are set, about 10 minutes.
-
Remove foil and weights.
-
Bake crust until golden brown, about 16-20 minutes.
-
Sprinkle 2 ounces of white chocolate over the hot crust.
-
Let stand for 1 minute until chocolate softens.
-
Using the back of a spoon, spread melted chocolate over the bottom and up the sides of the crust.
-
Transfer tart shell to a rack to cool completely.
-
For the mousse: Melt 6 oz white chocolate with 1/4 cup heavy cream in a small heavy saucepan over very low heat, stirring constantly.
-
Pour chocolate mixture into a bowl and let stand until just cool.
-
Beat egg white in a small bowl until soft peaks form.
-
Gradually add 1 tbsp sugar to egg white and beat until stiff but not dry peaks form.
-
Gently fold 1/2 cup whipped cream, 1 tbsp Grand Marnier, and the egg white into the cooled chocolate mixture.
-
Spoon mousse into the prepared tart shell, spreading evenly.
-
Refrigerate until mousse is set, at least 2 hours or overnight.
-
To assemble: Hull 25 strawberries. Make several lengthwise cuts in each strawberry, starting 1/4 inch from the base and extending through the tip, to create a fan shape. Gently fan out with fingertips.
-
In a heavy small saucepan, bring 1/2 cup strawberry jam and 1 tbsp Grand Marnier to a boil, stirring constantly.
-
Transfer jam mixture to a food processor and puree until smooth.
-
Brush a thin layer of the jam glaze over the set mousse.
-
Place 2 fanned strawberries with stems on opposing sides of the mousse.
-
Arrange remaining fanned strawberries artistically on top of the tart.
