  1. Wash and hull the strawberries, then place them in a large pot.
  2. Cover the berries with boiling water and let stand for 3 minutes to soften slightly.
  3. Drain the water from the pot completely.
  4. Add 2 1/2 cups of fresh water to the pot with the drained strawberries and bring to a hard boil for 3 minutes.
  5. Stir in the remaining sugar and continue to boil hard for another 3 minutes until the mixture thickens slightly.
  6. Ladle the hot jam into sterilized jars immediately.
  7. Seal the jars tightly while the jam is still hot.
