Description

These Stuffed Mushrooms are a delightful twist on a classic appetizer, blending earthy mushrooms with savory smoked ham and bright Mexican-inspired herbs. The filling combines finely chopped mushroom stems, onion, garlic, oregano, and a splash of lime juice for a vibrant flavor profile. Topped with Monterey Jack cheese and toasted breadcrumbs, they offer a perfect contrast of textures: tender, juicy mushrooms inside and a crisp, golden crust on top. Ideal for parties, potlucks, or as a sophisticated starter before dinner, these bite-sized treats are easy to assemble and bake. They bring a home-style comfort that feels elegant, making them a crowd-pleaser for any occasion.

Ingredients

Directions

  1. Remove stems from mushrooms and finely chop enough stems to measure 1/4 cup. Set caps aside.
  2. Heat margarine in a 10-inch skillet over medium heat just until bubbly.
  3. Place mushroom caps, topside down, in the skillet with the melted margarine.
  4. Cook uncovered until mushrooms are light brown, then remove them with a slotted spoon and set aside.
  5. In the same skillet, cook and stir the onion until tender.
  6. Stir in the white wine and simmer uncovered for 2 minutes.
  7. Mix in the chopped mushroom stems, ham, breadcrumbs, parsley, lime juice, garlic, oregano, and pepper.
  8. Allow the filling mixture to cool slightly.
  9. Shape the mixture into 24 small balls and place one ball into each mushroom cap.
  10. Sprinkle the tops with finely shredded Monterey Jack cheese.
  11. Set oven control to broil and place mushroom caps on a rack in a broiler pan.
  12. Broil with tops 3 to 4 inches from the heat until the cheese is melted and bubbly, about 3 minutes.

Note

Use Monterey Jack cheese for the best melting texture and mild flavor that complements the ham and herbs.

For a vegetarian variation, omit the ham and add extra sauted spinach or roasted red peppers to the filling.

Ensure mushroom caps are dry before stuffing to prevent the filling from becoming watery.

Keep a close eye on the mushrooms while broiling to prevent the cheese from burning, as broilers vary in intensity.

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave.
