Ingredients

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add bow-tie pasta and cook until al dente according to package directions.
  3. In the last 2 minutes of cooking, add the trimmed sugar snap peas to the boiling water to blanch them briefly.
  4. Drain pasta and snap peas, reserving 1 cup of pasta water.
  5. Rinse the pasta and peas under cold water to stop the cooking process and set the color.
  6. In a blender or food processor, combine cottage cheese, buttermilk, olive oil, parmesan cheese, lemon zest, and lemon juice. Blend until smooth and creamy.
  7. In a large bowl, combine the drained pasta, sugar snap peas, and halved cherry tomatoes.
  8. Pour the cottage cheese dressing over the pasta mixture and toss gently to coat evenly.
  9. Add reserved pasta water one tablespoon at a time if a looser consistency is desired.
  10. Fold in the thinly sliced scallions, chopped fresh dill, and chopped fresh parsley.
  11. Season with salt and freshly ground black pepper to taste.
  12. Serve immediately or chill for 30 minutes to allow flavors to meld.
