Description

This unique Japanese-style sweet potato pie offers a sophisticated twist on traditional dessert flavors. By roasting the sweet potatoes until tender, you unlock a deep, caramelized sweetness that serves as the perfect base for the savory depth of white miso. The filling is enriched with soy milk and thickened with cornstarch, then infused with aromatic notes of cinnamon, nutmeg, cardamom, and fresh ginger. The result is a custard-like texture that is both comforting and complex, topped with crunchy walnut halves for a delightful contrast in every bite.

Directions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the pie crust according to package or recipe instructions and set aside.
  3. Wash and scrub the sweet potatoes thoroughly.
  4. Place potatoes in a baking pan and brush skins lightly with olive oil.
  5. Bake potatoes for 1 1/2 hours, or until very soft when pierced with a fork.
  6. Allow potatoes to cool until handleable, then peel off the skins.
  7. Mash the peeled sweet potatoes in a large bowl or blender.
  8. Add the soy milk, white miso, cornstarch, cardamom, cinnamon, nutmeg, and ginger to the mashed potatoes.
  9. Blend or mix until the filling reaches a smooth, creamy consistency.
  10. Reduce oven temperature to 350°F (175°C).
  11. Spoon the sweet potato mixture into the prepared pie crust.
  12. Sprinkle walnut halves over the top of the filling.
  13. Bake for 1 hour, or until the filling is set.
  14. Cool to room temperature before serving.
