Directions

  1. Combine 1/2 cup of sugar and 2 tablespoons of water in a heavy small saucepan.
  2. Place over low heat, stirring constantly until the sugar completely dissolves into a clear syrup.
  3. Remove the saucepan from direct heat and place it on top of a double boiler.
  4. Add the fresh cranberries to the syrup mixture.
  5. Cover the saucepan and place it over simmering water in the double boiler.
  6. Cook gently for 45 minutes, stirring occasionally to ensure even coating.
  7. Remove the pan from the heat and let the cranberry mixture stand at room temperature overnight to cool and thicken.
  8. Place the remaining 1/2 cup of sugar on a flat plate.
  9. Drain the cranberries well from the syrup.
  10. Toss the drained cranberries in the sugar on the plate, turning them until fully coated.
  11. Let the candied cranberries dry on the plate for at least 30 minutes before serving.
  12. Store in an airtight container in the refrigerator for up to 3 days.
