Description

This sweet potato casserole transforms simple tubers into a luxurious side dish with the warmth of bourbon and fresh spices. The mashed base is incredibly creamy, enriched with butter and milk, while the streusel topping provides a delightful textural contrast with its crisp oats and toasted pecans. It is the perfect companion to roast turkey or pork chops during holiday feasts, but it’s also comforting enough for a cozy weeknight dinner. The hint of bourbon adds a sophisticated depth that elevates it beyond standard holiday fare.

Directions

  1. Preheat oven to 350°F (175°C).
  2. Bake sweet potatoes whole until tender, about 45-60 minutes. Let cool slightly, then split open and scoop the pulp into a large bowl, discarding skins.
  3. Melt 1/4 cup of the butter and beat it into the sweet potato pulp until smooth.
  4. Beat in the eggs, milk, 1/4 cup of the brown sugar, bourbon, cinnamon, salt, and nutmeg until well combined.
  5. Spread the sweet potato mixture evenly into a lightly greased 1.5-quart broiler-safe casserole dish.
  6. In a small bowl, combine the remaining 1/2 cup brown sugar, oats, and flour.
  7. Cut in the remaining 1/4 cup cold butter using a pastry cutter or fork until the mixture resembles coarse pea-sized crumbs.
  8. Stir the chopped pecans into the streusel mixture.
  9. Sprinkle the streusel topping evenly over the sweet potato mixture.
  10. Bake for 30 minutes, or until heated through and bubbly.
  11. For a crisper topping, switch oven to broil and cook for 3 minutes, watching closely to prevent burning, until the topping is golden brown.
