Ingredients

Directions

  1. Bring 3 cups of chicken broth to a boil in a large pot.
  2. Add the lima beans to the boiling broth and simmer until tender, about 5-10 minutes for fresh beans or 5 minutes for frozen.
  3. Remove the cooked lima beans and their cooking liquid using a slotted spoon, reserving the liquid.
  4. Transfer the lima beans and enough of the reserved broth to cover them into a blender or food processor.
  5. Blend until completely smooth, then press the mixture through a fine-mesh sieve into a clean saucepan to remove any fibrous bits.
  6. Return the remaining broth to a boil and add the corn kernels.
  7. Simmer the corn until tender, about 3 minutes for fresh or 5 minutes for frozen.
  8. Transfer the corn and its cooking liquid to the clean blender or food processor.
  9. Blend until smooth, then press through a fine-mesh sieve into the saucepan containing the lima bean puree or a separate warm bowl.
  10. Stir the crème fraîche or sour cream into the hot corn mixture until fully incorporated and heated through.
  11. Season both the lima bean puree and the corn puree with salt and pepper to taste.
  12. Ladle the lima bean mixture into four warm soup bowls, filling each halfway.
  13. Gently spoon the corn mixture on top of the lima beans in each bowl.
  14. Use a spoon to gently swirl the two mixtures together to create a marbled effect.
  15. Serve immediately, optionally topped with julienned ham or crumbled bacon.
