Chinese Pit Stickers
Description
Chinese Pot Stickers, also known as Guotie, are a beloved dim sum classic that offers the best of both worlds: a tender, steamed top and a delightfully crispy, browned bottom. This recipe features a juicy filling of lean ground pork, sweet shrimp, and finely chopped Napa cabbage, seasoned with aromatic ginger, garlic, and sesame oil. The combination of textures and umami-rich flavors makes them perfect for a quick dinner, a festive appetizer, or a satisfying snack. Wrapped in delicate wonton skins and pan-fried to perfection, these dumplings are easy to assemble and always crowd-pleasing. They pair wonderfully with a simple dipping sauce of soy sauce, rice vinegar, and chili oil.Ingredients
Directions
-
Finely chop the Napa cabbage and toss with 1 teaspoon of salt; let sit for 10 minutes, then squeeze out excess liquid.
-
Peel and devein 1/2 lb shrimp, then chop finely.
-
In a large bowl, combine 1 lb lean ground pork, the chopped shrimp, drained cabbage, 2 tbsp light soy sauce, 2 tbsp rice sherry or white wine, 1 tbsp chopped green onion, 1 tbsp sesame oil, 2 tsp minced ginger, and 1 minced garlic clove. Mix well until combined.
-
Place about 1 teaspoon of the filling in the center of each of the 64 wonton wrappers.
-
Dip your finger in water and moisten the edges of the wrappers. Fold and pleat to seal securely, forming crescent shapes.
-
Heat 1/4 cup vegetable oil in a large non-stick skillet over medium-high heat.
-
Arrange the pot stickers in a single layer in the skillet. Cook for 2-3 minutes until the bottoms are golden brown and crispy.
-
Carefully pour 1 cup of chicken stock or water into the skillet (it will sizzle).
-
Immediately cover the skillet with a lid and reduce heat to medium-low. Steam for 6-8 minutes until the wrappers are translucent and the filling is cooked through.
-
Remove the lid and cook for an additional 1-2 minutes to evaporate any remaining liquid and crisp the bottoms again.
-
Slide the pot stickers onto a serving plate, crispy side up. Serve immediately with dipping sauce.
