Description

Chinese Pot Stickers, also known as Guotie, are a beloved dim sum classic that offers the best of both worlds: a tender, steamed top and a delightfully crispy, browned bottom. This recipe features a juicy filling of lean ground pork, sweet shrimp, and finely chopped Napa cabbage, seasoned with aromatic ginger, garlic, and sesame oil. The combination of textures and umami-rich flavors makes them perfect for a quick dinner, a festive appetizer, or a satisfying snack. Wrapped in delicate wonton skins and pan-fried to perfection, these dumplings are easy to assemble and always crowd-pleasing. They pair wonderfully with a simple dipping sauce of soy sauce, rice vinegar, and chili oil.

Ingredients

Directions

  1. Finely chop the Napa cabbage and toss with 1 teaspoon of salt; let sit for 10 minutes, then squeeze out excess liquid.
  2. Peel and devein 1/2 lb shrimp, then chop finely.
  3. In a large bowl, combine 1 lb lean ground pork, the chopped shrimp, drained cabbage, 2 tbsp light soy sauce, 2 tbsp rice sherry or white wine, 1 tbsp chopped green onion, 1 tbsp sesame oil, 2 tsp minced ginger, and 1 minced garlic clove. Mix well until combined.
  4. Place about 1 teaspoon of the filling in the center of each of the 64 wonton wrappers.
  5. Dip your finger in water and moisten the edges of the wrappers. Fold and pleat to seal securely, forming crescent shapes.
  6. Heat 1/4 cup vegetable oil in a large non-stick skillet over medium-high heat.
  7. Arrange the pot stickers in a single layer in the skillet. Cook for 2-3 minutes until the bottoms are golden brown and crispy.
  8. Carefully pour 1 cup of chicken stock or water into the skillet (it will sizzle).
  9. Immediately cover the skillet with a lid and reduce heat to medium-low. Steam for 6-8 minutes until the wrappers are translucent and the filling is cooked through.
  10. Remove the lid and cook for an additional 1-2 minutes to evaporate any remaining liquid and crisp the bottoms again.
  11. Slide the pot stickers onto a serving plate, crispy side up. Serve immediately with dipping sauce.
