Directions

  1. Noodles: In large pot of salted boiling water, cook noodles until chewy; rinse in cold water; drain.
  2. Toss noodles with 1/2 t oil to prevent sticking.
  3. Cover & refrigerate until ready to use.
  4. Chicken: Remove and discard skin from chicken breast.
  5. Steam breast for 15 minutes; remove from steamer and cool uncovered.
  6. Shred chicken with fingers; slice into 3" strips.
  7. Egg Yolks: Mix yolks with cool water.
  8. Brush skillet at medium heat with peanut oil.
  9. Pour some egg yolk mixture in skillet; spread to make a thin sheet; remove when egg is set.
  10. Repeat until egg is used.
  11. Cool egg sheets.
  12. Slice into thin strips to match chicken shreds.
  13. Onions: Wash & remove roots.
  14. Slice the long way, then thinly slice on the bias.
  15. Dressing: Mix soy, vinegar, chili oil, ginger juice, garlic & sugar.
  16. Heat oil until it begins to smoke; add to other ingredients.
  17. Cool.
  18. Using hot oil gives dressing distinctive & mellow flavor.
  19. Mixing: Just before serving, mix dressing with cold noodles, chicken & onion.
  20. Garnish with egg strips.
