Description

This Tangy Fruit Gelatin is a delightful, no-bake dessert that balances creamy richness with bright fruit flavors. The base combines peach gelatin with yogurt and cream cheese for a smooth, mousse-like texture, while a layer of fresh berries and grapes adds vibrant color and crunch. Topped with a glossy gelatin glaze, it&# 226;€™s as beautiful as it is tasty. Perfect for summer potlucks, family gatherings, or a light weekend treat, this dish is easy to assemble ahead of time. Ingredients

Directions

  1. Heat 3 cups of water to a boil in a small saucepan.
  2. Remove from heat and stir in the peach gelatin until completely dissolved.
  3. Pour 2-1/4 cups of the hot gelatin mixture into a blender container.
  4. Reserve the remaining 1-1/4 cups of hot gelatin mixture in a small bowl.
  5. Add the plain yogurt, softened cream cheese, and thawed lemonade concentrate to the blender with the hot gelatin.
  6. Blend on medium speed until the mixture is completely smooth and creamy.
  7. Pour the creamy mixture into a 10-inch glass pie plate or quiche pan.
  8. Refrigerate the pie plate until the mixture is firm enough to hold its shape, about 2 hours.
  9. While the base sets, refrigerate the reserved 1-1/4 cups of gelatin mixture until it thickens enough to coat the back of a spoon, about 30-45 minutes.
  10. Arrange the cut fresh fruit evenly over the top of the firm gelatin base.
  11. Carefully spoon the thickened reserved gelatin over the fruit to create a glossy glaze.
  12. Cover and refrigerate overnight or until completely set before serving.

Note

You can serve this dessert individually by pouring the creamy gelatin mixture into 8 parfait glasses or small serving dishes instead of a pie plate. Garnish each with fruit and glaze as directed.

Ensure the cream cheese is fully softened to avoid lumps when blending. If the mixture is too thick, add a splash of additional water or lemonade concentrate.

For best results, use fresh, ripe fruit for the topping. Cut grapes and strawberries in half or quarters so they are easy to eat.

This dessert can be made up to 24 hours in advance. Store covered in the refrigerator.
