Description

This elegant yet simple Tarragon Chicken delivers restaurant-quality flavor with minimal effort. The boneless chicken breasts are pounded thin for quick, even cooking and served in a luxurious sauce made from butter, white wine, and stock. Fresh tarragon provides a distinctive anise-like aroma that pairs beautifully with the savory chicken. This dish is perfect for a romantic dinner or a special weeknight meal, cooking up in under thirty minutes.

Directions

  1. Trim chicken breasts of excess fat and pound between two sheets of wax paper to an even 1/3-inch thickness. Season with salt to taste.
  2. Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts to the skillet and fry, turning gently with tongs, for about 4 minutes per side, or until golden brown and cooked through.
  4. Remove chicken from the pan and set aside on a plate, keeping warm.
  5. Carefully pour out the excess fat from the skillet, leaving any browned bits at the bottom.
  6. Add the remaining 2 tablespoons of butter to the skillet over medium heat. Once melted, add the shallots and garlic.
  7. Sauté the shallots and garlic, stirring constantly, for about 3 minutes until softened and fragrant.
  8. Pour in the beef stock, chicken stock, and white wine. Bring to a simmer and cook until the liquid reduces by half.
  9. Stir in the fresh tarragon, parsley, and pepper. Taste and adjust salt if needed.
  10. Return the chicken breasts to the skillet, spooning the sauce over them.
  11. Heat the chicken through for 1-2 minutes until warmed.
  12. Serve immediately, garnished with extra parsley if desired.
