This elegant yet simple Tarragon Chicken delivers restaurant-quality flavor with minimal effort. The boneless chicken breasts are pounded thin for quick, even cooking and served in a luxurious sauce made from butter, white wine, and stock. Fresh tarragon provides a distinctive anise-like aroma that pairs beautifully with the savory chicken. This dish is perfect for a romantic dinner or a special weeknight meal, cooking up in under thirty minutes.Directions
-
Trim chicken breasts of excess fat and pound between two sheets of wax paper to an even 1/3-inch thickness. Season with salt to taste.
-
Heat 2 tablespoons of butter and the olive oil in a large skillet over medium-high heat.
-
Add chicken breasts to the skillet and fry, turning gently with tongs, for about 4 minutes per side, or until golden brown and cooked through.
-
Remove chicken from the pan and set aside on a plate, keeping warm.
-
Carefully pour out the excess fat from the skillet, leaving any browned bits at the bottom.
-
Add the remaining 2 tablespoons of butter to the skillet over medium heat. Once melted, add the shallots and garlic.
-
Sauté the shallots and garlic, stirring constantly, for about 3 minutes until softened and fragrant.
-
Pour in the beef stock, chicken stock, and white wine. Bring to a simmer and cook until the liquid reduces by half.
-
Stir in the fresh tarragon, parsley, and pepper. Taste and adjust salt if needed.
-
Return the chicken breasts to the skillet, spooning the sauce over them.
-
Heat the chicken through for 1-2 minutes until warmed.
-
Serve immediately, garnished with extra parsley if desired.
