  1. Cut beef into 1/2-inch cubes.
  2. In a Dutch oven, cook bacon over medium heat until crisp. Remove bacon and reserve.
  3. Remove all but 1 tablespoon of bacon drippings from the pot; reserve the rest.
  4. Over high heat, sauté beef in batches, adding reserved drippings as needed. Remove beef to a bowl once browned.
  5. In the same pot, sauté chopped onions in remaining drippings over medium heat for 10 minutes, or until well browned.
  6. Meanwhile, in a small skillet, toast cumin over medium heat for 1 minute, or until fragrant.
  7. Stir in chili powder, paprika, oregano, pepper, salt, thyme, and cinnamon.
  8. Add the spice mixture and minced garlic to the onions; sauté for 1 minute.
  9. Stir in cooked bacon, beef broth, tomatoes, chipotle chiles, and browned beef. Break up tomatoes with a wooden spoon.
  10. Bring chili to a boil, then reduce heat.
  11. Partially cover and simmer gently for 3 hours, stirring frequently toward the end to prevent sticking. Add water if the mixture becomes too thick.
  12. Remove and discard chipotle chiles.
  13. Serve chili in bowls, topped with chopped red onion.
