  1. Place the bulgur in an 8-inch square glass baking dish.
  2. Pour 1/2 cup of very hot tap water over the bulgur.
  3. Cover the dish tightly with foil.
  4. Let stand for 2 hours until the water is absorbed and the bulgur is tender.
  5. While the bulgur rests, prepare the dressing by whisking together orange juice, lite soy sauce, peanut oil, sesame oil, rice wine vinegar, honey, and crushed red pepper flakes in a small bowl.
  6. Cover the dressing and chill in the refrigerator until ready to serve.
  7. Peel and cut one carrot into thin julienne strips.
  8. Slice one peach in half, pit it, and cut into thin slices.
  9. Arrange the fully cooked sliced turkey breast on a large serving platter.
  10. Artfully arrange half of the peach slices alongside the turkey on the platter.
