The Doctor’s Sourdough Bread
Description
This recipe produces a robust, flavorful bread that combines the tang of sourdough starter with the richness of milk and butter. The dough is enriched with honey and wheat germ, creating a loaf with a golden crust and a tender, moist crumb. It features a unique overnight fermentation process that develops deep flavor and improves digestibility. Perfect for serving fresh from the oven with soup, or sliced for sandwiches, this bread offers a comforting, homemade taste. The inclusion of baking soda helps balance the acidity, while the yeast ensures a reliable rise. A wonderful centerpiece for any breakfast or dinner table.Directions
-
In a large bowl, mix the sourdough starter, 2 1/2 cups of the flour, and all the water.
-
Cover the bowl and let it stand in a warm place overnight.
-
The next morning, melt the butter in the warm milk.
-
Stir in the yeast until dissolved, then add the honey and mix thoroughly.
-
Add the remaining 4 1/2 cups of flour and the wheat germ to the mixture.
-
Sprinkle the sugar, salt, and baking soda over the mixture.
-
Mix lightly to combine all ingredients into a shaggy dough.
-
Let the dough stand for 30 to 50 minutes until it becomes bubbly.
-
Add more flour as needed until the dough cleans the sides of the bowl.
-
Turn the dough out onto a lightly floured surface.
-
Knead the dough for about 10 minutes, or until it is smooth and elastic.
-
Divide the dough and form into four 1-pound loaves.
-
Place each loaf into a well-greased 9x3 inch loaf pan.
-
Cover and let rise in a warm place for 2 to 3 hours, or until doubled in size.
-
Preheat oven to 400 degrees F (200 degrees C).
-
Bake the loaves for 20 minutes.
-
Reduce oven temperature to 325 degrees F (165 degrees C).
-
Continue baking for 20 minutes longer, or until the bread is thoroughly baked and sounds hollow when tapped.
-
Remove loaves from pans and place on a wire rack to cool.
-
Brush the tops of the warm loaves with butter to prevent a hard crust.
