Description

This recipe produces a robust, flavorful bread that combines the tang of sourdough starter with the richness of milk and butter. The dough is enriched with honey and wheat germ, creating a loaf with a golden crust and a tender, moist crumb. It features a unique overnight fermentation process that develops deep flavor and improves digestibility. Perfect for serving fresh from the oven with soup, or sliced for sandwiches, this bread offers a comforting, homemade taste. The inclusion of baking soda helps balance the acidity, while the yeast ensures a reliable rise. A wonderful centerpiece for any breakfast or dinner table.

Directions

  1. In a large bowl, mix the sourdough starter, 2 1/2 cups of the flour, and all the water.
  2. Cover the bowl and let it stand in a warm place overnight.
  3. The next morning, melt the butter in the warm milk.
  4. Stir in the yeast until dissolved, then add the honey and mix thoroughly.
  5. Add the remaining 4 1/2 cups of flour and the wheat germ to the mixture.
  6. Sprinkle the sugar, salt, and baking soda over the mixture.
  7. Mix lightly to combine all ingredients into a shaggy dough.
  8. Let the dough stand for 30 to 50 minutes until it becomes bubbly.
  9. Add more flour as needed until the dough cleans the sides of the bowl.
  10. Turn the dough out onto a lightly floured surface.
  11. Knead the dough for about 10 minutes, or until it is smooth and elastic.
  12. Divide the dough and form into four 1-pound loaves.
  13. Place each loaf into a well-greased 9x3 inch loaf pan.
  14. Cover and let rise in a warm place for 2 to 3 hours, or until doubled in size.
  15. Preheat oven to 400 degrees F (200 degrees C).
  16. Bake the loaves for 20 minutes.
  17. Reduce oven temperature to 325 degrees F (165 degrees C).
  18. Continue baking for 20 minutes longer, or until the bread is thoroughly baked and sounds hollow when tapped.
  19. Remove loaves from pans and place on a wire rack to cool.
  20. Brush the tops of the warm loaves with butter to prevent a hard crust.
