Ingredients

Directions

  1. In a food processor, combine sugar, cottage cheese, sour cream, dark rum, and light cream cheese. Process until completely smooth and creamy. Set aside.
  2. In a small bowl, mix the hot water with the instant espresso granules until dissolved. Allow to cool slightly.
  3. Split the ladyfingers in half lengthwise.
  4. Quickly dip 20 ladyfinger halves, cut-side down, into the espresso mixture. Do not soak too long, or they will become mushy.
  5. Arrange the dipped ladyfingers in a single layer, cut-side down, in the bottom of a 9-inch square baking dish.
  6. Spread half of the cheese mixture evenly over the ladyfingers.
  7. Dip the remaining 20 ladyfinger halves in the espresso mixture and arrange them on top of the cheese layer.
  8. Spread the remaining cheese mixture over the top layer of ladyfingers.
  9. Insert one toothpick in each corner and one in the center of the dish to prevent plastic wrap from sticking to the surface.
  10. Cover the dish tightly with plastic wrap. Refrigerate for at least 3 hours, or up to 8 hours, to allow the flavors to meld and the dessert to set.
  11. Remove from the refrigerator and discard the toothpicks.
  12. Sift unsweetened cocoa powder over the top just before serving.

If you prefer a stronger coffee flavor, increase the amount of espresso or use strong brewed coffee instead of water.

You can substitute the dark rum with vanilla extract for a non-alcoholic version.

Garnish with fresh berries or a sprinkle of cinnamon sugar if desired.
