Description

This classic Tiramisu features delicate layers of espresso-soaked ladyfingers and a rich, airy mascarpone cream. The dish balances the bold bitterness of strong coffee and brandy with the sweet, smooth texture of whipped egg whites and cheese. It is a no-bake dessert that requires patience to set, making it perfect for dinner parties or special celebrations. The result is a sophisticated, melt-in-your-mouth treat that captures the essence of traditional Italian baking. Serve chilled for the best texture and flavor experience.

Ingredients

Directions

  1. If ladyfingers are soft, toast them in a 350 degree F oven for 6 to 8 minutes.
  2. In a small bowl, stir together 3 tablespoons of the brandy, coffee granules, and 1 cup water.
  3. Brush the coffee mixture over the flat side of the ladyfingers and set aside.
  4. Bring about 1 inch of water to a simmer in the bottom of a large saucepan.
  5. Combine egg whites, sugar, cream of tartar, and 3 tablespoons cold water in a heatproof mixing bowl that fits over the saucepan.
  6. Set the bowl over the simmering water and beat with a hand-held mixer at low speed until an instant-read thermometer registers 140 degrees F, about 4 to 5 minutes.
  7. Increase speed to high and continue beating over heat for 3 minutes, until the mixture forms a ribbon trail.
  8. Remove the bowl from the heat and beat until cool and fluffy, about 4 minutes. Set aside.
  9. In a large bowl, beat mascarpone and cream cheese until creamy.
  10. Add about 1 cup of the beaten whites and the remaining 1 tablespoon brandy, beating until smooth.
  11. Fold in the remaining egg white mixture.
  12. Line the bottom and sides of a 3-quart trifle bowl or souffl&# 195;© dish with ladyfingers.
  13. Spoon in one-quarter of the filling and top with a layer of ladyfingers.
  14. Repeat with two more layers of filling and ladyfingers.
  15. Arrange the fourth layer of ladyfingers decoratively over the top, trimming to fit if necessary.
  16. Top with the remaining filling.
  17. Garnish with chocolate shavings.
  18. Cover and chill for at least 8 hours or overnight.
  19. Dust with confectioners' sugar and serve.

Note

The ingredient list in the original source was fragmented. Ensure you have 3 large egg whites, 1 cup plus 2 tablespoons sugar, 1/4 teaspoon cream of tartar, 4 oz mascarpone cheese, and 4 oz reduced-fat cream cheese (softened) in addition to the listed items.

For best results, use high-quality espresso or strong brewed coffee for the soaking liquid.

If ladyfingers are stale, toasting them helps them hold their structure better when soaked.

This recipe uses raw egg whites cooked to a safe temperature (140ðF) using a bain-marie method. Ensure the thermometer reading is accurate for food safety.
