  1. Soak dried black mushrooms in 1/2 cup hot water for 15 minutes until soft. Discard stems and slice caps. Reserve the soaking liquid.
  2. Heat oil in a wok or large skillet over medium-high heat.

  4. Add snow peas and stir-fry for 1 minute until bright green and crisp-tender.
  5. Add sliced mushrooms, bamboo shoots, and 1/4 cup of the reserved mushroom liquid.
  6. Stir in rice wine, sugar, mushroom oyster sauce, and soy sauce.
  7. Simmer for 2 minutes until the sauce thickens slightly.
  8. Remove from heat and drizzle with sesame oil. Serve immediately over tofu.
