Description

This classic Tuna Delight is a refreshing, cold dish that combines flaked tuna with crisp vegetables and a rich, creamy dressing. Set lightly with gelatin, it holds its shape beautifully while offering a tender, melt-in-your-mouth texture. The addition of black olives adds a briny pop, while toasted slivered almonds provide a delightful crunch that contrasts with the smooth mayonnaise and sour cream base. Its an ideal make-ahead recipe for potlucks, light summer lunches, or elegant appetizers. The subtle lemon juice brightens the rich flavors, ensuring each bite is balanced and satisfying.

Ingredients

Directions

  1. In a small bowl, sprinkle the gelatin over the water and let stand for 5 minutes until softened.
  2. Heat the gelatin mixture over low heat, stirring constantly, until the gelatin is completely dissolved. Do not boil. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the mayonnaise, sour cream, and lemon juice. Whisk until smooth.
  4. Slowly pour the warm gelatin mixture into the mayonnaise mixture while whisking vigorously to prevent curdling.
  5. Fold in the flaked tuna, minced onion, quartered olives, toasted almonds, and chopped parsley until evenly distributed.
  6. Gently fold in the sliced hard-boiled eggs, being careful not to break them.
  7. Pour the mixture into a greased mold or a serving bowl. Cover and refrigerate for at least 4 hours, or until set.
  8. To serve, unmold onto a platter if using a mold, or spoon directly from the bowl. Garnish with additional parsley or almonds if desired.
