Ingredients

Directions

  1. Drain the green peppercorns and set aside.
  2. Cut off the tip and stem of the plum tomatoes, remove seeds and core.
  3. Slice tomatoes into flat slices, then cut lengthwise into 1/4-inch strips and horizontally into 1/4-inch pieces.
  4. Place diced tomatoes on a plate, cover, and refrigerate to chill.
  5. Chill 4 serving plates in the refrigerator.
  6. Slice the fresh tuna into 1/4-inch thick slices.
  7. Peel two oranges and separate into segments for garnish.
  8. In a small saucepan over medium-high heat, combine the fresh orange juice, 1 tablespoon of green peppercorns, and 1/2 teaspoon of salt.
  9. Bring the mixture to a boil, then reduce heat and simmer until reduced to 2/3 cup, creating a thick, syrupy consistency.
  10. Transfer the reduced liquid to a bowl and allow it to cool to room temperature.
  11. Once cooled, vigorously beat in 1/4 cup vegetable oil to emulsify and create the glaze.
  12. If the glaze appears shiny or threatens to separate, add a few drops of water or orange juice to stabilize it.
  13. Spoon a pool of the orange glaze onto each chilled plate.
  14. Arrange the sliced tuna sashimi on top of the glaze.
  15. Garnish with the remaining tablespoon of green peppercorns, orange sections, and chilled diced tomatoes.
