Description

This elegant Italian-style chocolate cake is a masterpiece of texture and flavor. Unlike traditional cakes, it relies on whipped egg whites and melted chocolate for its structure, resulting in a tender, airy crumb that is intensely chocolatey. The addition of finely ground amaretti cookies adds a subtle almond nuance and delightful crunch, while a hint of dark rum deepens the complexity. This dessert is perfect for special occasions, holidays, or whenever you want to impress guests with a sophisticated yet approachable bake. It pairs beautifully with a dollop of whipped cream or a berry compote.

Ingredients

Directions

  1. Preheat oven to 375&# 194;°F (190ðC).
  2. Butter and flour three 9-inch round cake pans, then tap out excess flour.
  3. In a large bowl, beat egg yolks until pale yellow and they form a ribbon when beaters are lifted, about 5 minutes.
  4. Beat the dark rum and vanilla extract into the egg yolks.
  5. In a separate clean bowl, beat egg whites with cream of tartar until soft peaks form.
  6. Gradually add sugar, one tablespoon at a time, while beating until whites are stiff, shiny, and hold stiff peaks.
  7. Melt the semi-sweet chocolate and butter together, then stir this mixture into the egg yolk mixture until well combined.
  8. Gently fold one-quarter of the egg whites into the chocolate batter to lighten it.
  9. Using a spatula, gently fold in the remaining egg whites until just combined, being careful not to deflate the batter.
  10. Sift together the cornstarch and unsweetened cocoa powder, then mix with the finely ground amaretti cookies.
  11. Gently fold the dry ingredients into the batter until no white streaks remain.
  12. Divide the batter evenly among the prepared cake pans.
  13. Bake for 18 to 20 minutes, or until the centers rise and the tops begin to crack slightly.
  14. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely (note: cakes will fall slightly as they cool).
