Preheat oven to 350ðF (175ðC).

Cook bacon in a large skillet over medium heat until crisp. Remove bacon, reserving 2 tablespoons of drippings in the skillet. Crumble bacon and set aside.

Sauté onion in the reserved bacon drippings until tender. Remove from heat.

In a large bowl, combine cooked rice, drained frozen spinach, water chestnuts, half of the crumbled bacon, and salt (if using). Stir well.

In a separate bowl, combine cream of mushroom soup and sour cream. Stir half of this mixture into the spinach mixture.
