  1. Preheat oven to 350ðF (175ðC).
  2. Cook bacon in a large skillet over medium heat until crisp. Remove bacon, reserving 2 tablespoons of drippings in the skillet. Crumble bacon and set aside.
  3. Sauté onion in the reserved bacon drippings until tender. Remove from heat.
  4. In a large bowl, combine cooked rice, drained frozen spinach, water chestnuts, half of the crumbled bacon, and salt (if using). Stir well.
  5. In a separate bowl, combine cream of mushroom soup and sour cream. Stir half of this mixture into the spinach mixture.
  6. Lightly grease a 12x7-inch baking dish. Spoon the spinach mixture into the dish.
  7. Arrange sliced turkey on top of the spinach mixture.
  8. Spoon the remaining soup mixture over the turkey.
  9. In a small bowl, mix breadcrumbs and melted butter. Sprinkle the breadcrumb mixture around the edges of the casserole.
  10. Sprinkle the remaining crumbled bacon over the center of the casserole.
  11. Bake uncovered at 350ðF (175ðC) for 30 minutes, or until heated through and golden.
