Description

This Turkey Loaf with Spinach is a delightful twist on the classic meatloaf, offering a lighter yet deeply satisfying meal. Ground turkey breast is blended with aromatic onions, carrots, and herbs to create a tender, flavorful base. The star of the dish is the hidden center: a rich mixture of cooked spinach, egg whites, and sharp grated Parmesan cheese that melts into every bite. It is moist, savory, and beautifully textured, making it perfect for dinner parties or a hearty weeknight supper.

Ingredients

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Place the frozen turkey cubes, diced onions, and sliced carrots into the bowl of a food processor fitted with the steel blade.
  3. Pulse and process until the mixture is puréed to a ground consistency.
  4. Transfer the turkey mixture to a large mixing bowl.
  5. Add the bread crumbs, 4 egg whites, 1/4 teaspoon salt, cayenne pepper, paprika, and thyme to the bowl.
  6. Mix well until all ingredients are evenly combined.
  7. In a separate small bowl, combine the cooked drained spinach, 2 egg whites, grated Parmesan, 1/4 teaspoon salt, and black pepper. Mix well to form the filling.
  8. Spray a baking sheet generously with vegetable oil spray.
  9. Take half of the turkey mixture and spread it onto the baking sheet, forming a rectangle approximately 8 x 4 inches.
  10. Spoon the spinach filling in a long mound down the center of the turkey rectangle.
  11. Cover the spinach with the remaining half of the turkey mixture, sealing the edges smoothly to enclose the filling.
  12. Bake for 1 hour, or until the turkey is cooked through and the internal temperature reaches 165°F (74°C).
  13. Let rest for 5 minutes before slicing and serving hot, warm, or chilled.

Note

Freezing the turkey cubes for 45 minutes before processing helps keep the meat cold and prevents it from becoming pasty, ensuring a better texture in the final loaf.

Make sure to thoroughly squeeze out excess water from the cooked frozen spinach before mixing it with the egg whites and Parmesan. Too much moisture can make the filling soggy.

This loaf can be stored in an airtight container in the refrigerator for up to 3-4 days. It is also excellent served cold as part of a sandwich or salad.

For a richer flavor, you can substitute half of the egg whites with whole eggs, though the recipe as written is lower in fat.
