Description

This Middle-Eastern dessert features Whites 1 Grated rind of small orange, Unsweetened cocoa powder 1/2 c Whole almonds, toasted and, Sugar -finely ground, Vegetable oil. It delivers sweet, indulgent flavor. A wonderful way to end any meal, especially on special occasions. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

  1. for the pan 2 tb Confectioners' sugar 2 tb Cold brewed coffee 1 c Fresh berries 1/4 ts Vanilla extract From "Little Meals" by Rozanne Gold (Villard Books, 1993).
  2. Preheat oven to 350'F.
  3. Beat 6 of the egg whites until stiff.
  4. Set aside.
  5. In medium bowl,
  6. combine cocoa with sugar, oil, remaining 2 egg whites, coffee, vanilla extract and orange rind.
  7. Mix ground almonds with flour and then add to cocoa mixture.
  8. Stir well.
  9. Add 1/3 of the beaten egg whites.
  10. Mix with rubber spatula.
  11. Then fold in the remainder of the beaten egg whites.
  12. Pour into an oiled and floured 8 1/2" springform pan.
  13. Bake for 25 minutes at 350'F.
  14. (Be careful not to overbake.)
  15. Remove from oven and
  16. allow cake to sit for 10 minutes before removing from springform pan.
  17. Cool completely.
  18. Put dolly (or stencil of your choice) on top of cake.
  19. Sprinkle with confectioners' sugar, then remove dolly carefully, leaving lace design.
  20. Serve with fresh berries on the side
