This Ultralight Chocolate Cake is a sophisticated Middle-Eastern-inspired dessert that balances rich cocoa flavors with an incredibly airy texture. Made primarily with egg whites and unsweetened cocoa, it offers a lighter alternative to traditional heavy cakes. The addition of toasted ground almonds and orange rind provides a delightful nutty crunch and aromatic brightness, while cold brewed coffee deepens the chocolate profile. Ingredients

Directions

  1. Preheat oven to 350F (177C).
  2. Oil an 8-inch springform pan and dust with flour, tapping out excess.
  3. Toast whole almonds in a dry pan until fragrant, then grind finely.
  4. Separate 8 eggs, ensuring no yolk contaminates the whites.
  5. Beat 6 of the egg whites in a clean bowl until stiff peaks form. Set aside.
  6. In a medium bowl, combine remaining 2 egg whites, cocoa powder, sugar, vegetable oil, cold brewed coffee, vanilla extract, and orange rind. Whisk until smooth.
  7. Fold the ground almonds and flour into the chocolate mixture until just combined.
  8. Gently fold the stiffly beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the batter.
  9. Pour batter into the prepared springform pan and smooth the top.
  10. Bake for 25-30 minutes, or until the center is set and a toothpick inserted comes out clean. Do not overbake.
  11. Remove from oven and let cool in the pan for 10 minutes.
  12. Carefully release the springform ring and transfer cake to a serving plate.
  13. Dust with confectioners' sugar and top with fresh berries before serving.

Note

Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 4 days. Bring to room temperature before serving for best texture.

For a gluten-free version, substitute the flour with an equal amount of almond flour or a gluten-free baking flour blend.

Ensure your mixing bowl for the egg whites is completely free of grease for best whipping results. Cold eggs are easier to separate, but room-temperature whites whip up to a larger volume.
