  1. Bring 3 cups of water to a boil in a medium saucepan.
  2. Add 1 pound of unpeeled medium-size fresh shrimp to the boiling water.
  3. Cook for 3 to 5 minutes, or until the shrimp turn pink and are cooked through.
  4. Drain the shrimp well and immediately rinse with cold water to stop the cooking process.
  5. Chill the shrimp in the refrigerator until needed.
  6. Peel and devein the chilled shrimp, then set aside.
  7. In a large bowl, combine 3 tablespoons sherry wine vinegar (or red wine vinegar), 1 teaspoon sugar, 1 teaspoon grated orange rind, and 1 crushed garlic clove.
  8. Gradually add 1/3 cup olive oil to the vinegar mixture, beating well with a wire whisk until emulsified. Set aside.
  9. Peel 2 navel oranges and cut them into 1/2-inch round slices. Cut these slices into quarters.
  10. Add the orange quarters, peeled shrimp, and 1 cup sliced pimiento olives to the dressing. Stir gently to combine.
  11. Cover the bowl and chill the mixture for at least 1 hour to allow flavors to meld.
  12. To serve, add 5 cups torn Bibb lettuce, 5 cups torn leaf lettuce, and 2 sliced green onions to the shrimp mixture. Toss gently to combine.
