  1. In a standing mixer with paddle attachment, cream butter and 1 1/4 cups sugar until light and fluffy.
  2. Split the vanilla bean and scrape the seeds into the butter mixture, discarding the pod or saving it for the compote.
  3. Mix in egg whites and flour until just combined.
  4. Cover the dough with plastic wrap and chill in the refrigerator, preferably overnight.
  5. For the compote, combine dried cherries, figs, pears, currants, white wine, sugar, and the reserved vanilla bean pod in a heavy-bottomed saucepan.
  6. Bring the compote mixture to a boil, then reduce heat and simmer for 5 to 8 minutes.
  7. Remove the pan from heat and let the fruit cool in the liquid.
  8. Remove the fruit from the sauce and set aside.
  9. Return the sauce to the heat and reduce until it reaches a syrup-like consistency.
  10. Combine the reduced syrup with the fruit and discard the vanilla pod.
  11. Preheat oven to 350F (175C).
  12. Spread about 1 teaspoon of the cold tuile batter thinly over stencils on a greased baking sheet.
  13. Bake tuiles until slightly golden and crisp, watching closely as they cook rapidly.
  14. Let tuiles set for a few seconds on the sheet before transferring to a wire rack to cool completely.
  15. Assemble by layering cooled tuiles and fruit compote.
  16. Serve topped with ice cream, frozen yogurt, or whipped cream.
