Description

This Italian main features Celery sticks, sliced Salt & pepper, Green pepper, chopped 1 pt Vegetable stock, Carrots. It delivers aromatic, well-seasoned taste, a pleasant kick of heat. Directions

  1. Heat oil in the wok & add the garlic & walnuts.
  2. Fry stirring frequently till the nuts are slightly browned.
  3. Remove them with a slotted spoon.
  4. Add the prepared vegetables & cook till slightly softened.
  5. Stir in the rice & season to taste.
  6. Pour in the stock & bring to a boil.
  7. Cover, reduce heat & simmer gently for 10 minutes or so.
  8. Mix together the tomatoes & olives.
  9. Stir corn & peas into the vegetable mixture in the wok.
  10. Place tomatoes & olives on top, do not stir them in & replace the lid.
  11. Simmer for 5 minutes.
  12. All the stock should be absorbed.
  13. Before serving, stir in olives & tomatoes, nuts & herbs.
  14. Serve with a salad.
