Description

This hearty Vegetable Dahl Soup combines yellow split peas, mung beans, and basmati rice with aromatic spices like turmeric, cumin, and garam masala. Simmered with fresh vegetables including carrots, cauliflower, and radishes, it is blended until smooth for a comforting, creamy texture. The dish is finished with a touch of green chili and fresh coriander for a balanced, warm flavor profile.

Ingredients

Directions

  1. Soak the split peas in hot water for 1 hour & drain.
  2. Wash the Mung beans well & pick out any loose stones & sticks, etc.
  3. Combine rice, legumes, ghee, turmeric, asafetida, chili, ginger root, vegetables & stock in large pot.
  4. Cook for about one hour.
  5. Blend the vegetables at high speed to make a very creamy & smooth soup & return to the pot.
  6. Sprinkle in the ground coriander, cumin & garam masala.
  7. Heat till almost boiling & simmer gently for 2 to 3 minutes, stirring to prevent burning.
  8. Add the black pepper, salt & minced coriander & serve.
