Heat a large skillet over medium heat. Add the chopped vegetables and 1/2 cup of the beef broth.

Saut the vegetables, stirring occasionally, for about 7 minutes until they are tender-crisp. Remove from heat and let cool slightly.

In a large mixing bowl, combine the remaining 1/2 cup beef broth, bread crumbs, parsley, beaten egg, salt, and pepper.

Add the cooked vegetable mixture and ground lean beef to the bowl. Mix thoroughly until just combined.
