  1. Preheat oven to 375°F (190°C). Lightly coat a 9x5-inch loaf pan with non-stick cooking spray.
  2. In a small skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine grated zucchini, sliced steamed carrots, steamed broccoli flowerettes, uncooked oatmeal, oat bran, and shredded cheddar cheese.
  4. In a small bowl, whisk together tomato sauce, egg, egg white, salt, pepper, sage, thyme, chopped parsley, and grated Parmesan cheese until well blended.
  5. Add the sautéed onion to the large bowl with the vegetables. Pour the tomato sauce mixture over the vegetables and stir thoroughly until all ingredients are evenly combined.
