Description

This classic vinegar taffy offers a delightful balance of sweet and tart flavors, creating a chewy, translucent candy that melts in your mouth. The addition of vinegar prevents crystallization, ensuring a smooth texture, while the pulling process aerates the sugar for a lighter bite. Perfect for holidays or as a nostalgic treat, this homemade confection is easy to customize with various flavorings like vanilla, citrus, or peppermint. Ideal for parties or gift-giving, these strips of taffy are best enjoyed fresh but store well in an airtight container.

Ingredients

Directions

  1. Combine sugar, water, corn syrup, salt, and vinegar in a heavy saucepan.
  2. Cook over medium heat, stirring until sugar dissolves, then stop stirring.
  3. Boil until the mixture reaches 260&# 194;°F (127ðC) (hard ball stage) on a candy thermometer.
  4. Pour the hot syrup onto a greased dish or platter.
  5. Sprinkle your chosen flavoring (vanilla, citrus, peppermint, etc.) over the top.
  6. Let cool until the edges are firm enough to handle, turning edges in toward the center.
  7. Dip fingertips in cornstarch or fat to prevent sticking.
  8. Use fingertips to lift and pull the taffy out with both hands.
  9. Fold the taffy over and pull again, repeating until the mixture becomes pale and firm.
  10. Continue pulling until the taffy is difficult to stretch and has a smooth texture.
  11. Pull the taffy into long, thin strips.
  12. Cut the strips immediately with greased scissors.
  13. Roll each piece in powdered sugar or wrap individually in wax paper.

Storage: Store cooled taffy in an airtight container in a cool, dry place.

Rescuing Sugared Taffy: If the taffy becomes grainy or sugared, place it in a pan with 2 Tbsp corn syrup and 1/4 cup water. Stir until dissolved and reboil to the hard ball stage, then pull again.

Variations: Finely chopped nuts, fruit, or additional flavorings can be added while pulling the taffy for extra texture and taste.

Safety: Use only fingertips when handling hot sugar to avoid burns. Work on a greased surface to prevent sticking.
