Vinegar Taffy (Valery Whittle)
Description
This classic vinegar taffy offers a delightful balance of sweet and tart flavors, creating a chewy, translucent candy that melts in your mouth. The addition of vinegar prevents crystallization, ensuring a smooth texture, while the pulling process aerates the sugar for a lighter bite. Perfect for holidays or as a nostalgic treat, this homemade confection is easy to customize with various flavorings like vanilla, citrus, or peppermint. Ideal for parties or gift-giving, these strips of taffy are best enjoyed fresh but store well in an airtight container.Ingredients

Storage: Store cooled taffy in an airtight container in a cool, dry place.
Rescuing Sugared Taffy: If the taffy becomes grainy or sugared, place it in a pan with 2 Tbsp corn syrup and 1/4 cup water. Stir until dissolved and reboil to the hard ball stage, then pull again.
Variations: Finely chopped nuts, fruit, or additional flavorings can be added while pulling the taffy for extra texture and taste.
Safety: Use only fingertips when handling hot sugar to avoid burns. Work on a greased surface to prevent sticking.
