  1. Place the white beans in a saucepan with the bay leaf, winter savory (or thyme) sprigs, and 2 of the sage leaves.
  2. Add a splash of water or vegetable broth to the saucepan and warm gently over low heat for 10-15 minutes to infuse the beans with herb flavors.
  3. Remove and discard the bay leaf, herb sprigs, and whole sage leaves. Set the beans and their liquid aside.
  4. While the beans warm, finely chop the remaining 8 sage leaves.
  5. Heat a large skillet over medium heat. Add the chopped onion, 1/2 teaspoon salt, and a few pinches of pepper.
  6. Sauté the onions with a small splash of water until they begin to release their juices and soften, about 5 minutes.
