  1. In a medium saucepan, scald the half & half over medium heat until it begins to steam, then set aside.
  2. In a medium bowl, whisk together the egg yolks, 3/4 cup of the sugar, a pinch of salt, and 1 teaspoon of the vanilla until smooth and pale.
  3. Gradually whisk the scalded half & half into the egg yolk mixture to temper the eggs.
  4. Transfer the mixture back to the saucepan and cook over moderate heat, stirring constantly with a wooden spoon or heatproof spatula.
  5. Continue cooking until the custard thickens enough to coat the back of a spoon and reaches 165F on a candy thermometer, about 10-15 minutes. Do not boil.
  6. Remove the custard from heat and stir in the remaining sugar and vanilla. Let cool slightly.
  7. Melt white chocolate in a heatproof bowl set over simmering water or in short bursts in the microwave, stirring until smooth.
