  1. Drain the mandarin oranges, reserving the liquid from the cans.
  2. Combine 1/2 cup of the reserved mandarin juice with the orange liqueur in a small bowl to create the syrup.
  3. Melt the 10 ounces of white chocolate gently over low heat, stirring until smooth.
  4. Stir 1/2 cup of the whipping cream into the melted white chocolate until fully combined.
  5. Allow the chocolate mixture to cool to room temperature.
  6. Whip the remaining 1 1/2 cups of cream until it becomes light and fluffy.
  7. Fold the cooled white chocolate mixture into the whipped cream until fully incorporated.
  8. Refrigerate the mousse mixture for approximately 1 hour, or until it reaches a frosting-like consistency.
  9. Slice the sponge cake horizontally into 3 even layers.
