This Mediterranean side-dish features Squash -- cut in half, seeded, Water, Olive oil, Onion -- diced. It delivers hearty, protein-packed satisfaction, aromatic, well-seasoned taste. Directions

  1. Preheat oven to 400.
  2. Place squash cut side down in 9 x 13 pan.
  3. Pour water in pan and bake squash 50 - 60 minutes or until tender.
  4. Using saucepan, saute onion in oil until translucent.
  5. Add garlic and rice; cook 1 minute.
  6. Add broth, turkey, raisins, and seasonings.
  7. Bring to full boil.
  8. Reduce heat to low and cover, simmer 15 - 20 minutes or until rice is cooked.
  9. Stir in pecans.
  10. When squash is tender, turn cut side up and fill generously with the stuffing.
  11. Return to oven and bake 3 minutes.
  12. Serve as is or with a generous ladle of gravy
