  1. =OR=- 2 Stalks celery; chopped 1 ts Bottled garlic: 1 Unpeeled potato; diced 1 ts Ground cumin; Salt & pepper to taste
  2. Heat oil in a large soup pot.
  3. Add onion, garlic, cumin.
  4. Saute 1 minute.
  5. Add peas, and stir until coated.
  6. Add water, bring to a boil, reduce heat.
  7. Cover, and simmer 1 hour.
  8. Add remaining ingredients, and continue cooking 20-30 minutes, or until vegetables are tender.
  9. This soup really thickens overnight in the refrigerator.
  10. The taste is enhanced as well
