This elegant Yin-Yang Soup is a playful yet comforting dish that brings a restaurant-quality presentation to your home table. By blending fresh spinach into a vibrant green puree and sweet corn into a rich golden base, you create a stunning visual contrast that is as delightful to look at as it is to eat. The texture is silky and smooth, thickened gently with cornstarch for a luxurious mouthfeel. It&# 226;€™s light enough for a lunch but hearty enough for a dinner starter. Perfect for entertaining or adding a touch of whimsy to a family meal, this vegan and vegetarian soup relies on simple, wholesome ingredients to deliver a fresh, clean flavor profile that celebrates the natural sweetness of corn and the earthiness of spinach.

Ingredients

Directions

  1. Place the sweet corn kernels in a blender with 1 cup of water and 1/4 teaspoon of salt.
  2. Blend the corn mixture until completely smooth, then transfer to a bowl and set aside.
  3. Place the chopped spinach in the blender with 1 cup of water and the remaining 1/4 teaspoon of salt.
  4. Blend the spinach mixture until smooth, then transfer to a separate bowl and set aside.
  5. In a small bowl, mix the cornstarch with the remaining 1 cup of water until fully dissolved and smooth.
  6. Heat 1/2 teaspoon of vegetable oil in a saucepan over medium heat.
  7. Pour the corn puree into the heated saucepan.
  8. Stir half of the cornstarch mixture into the corn puree, continuing to stir until the soup thickens slightly.
  9. Carefully pour the corn mixture into one half of a large 2-quart serving bowl.
  10. Clean the saucepan and heat the remaining 1/2 teaspoon of vegetable oil over medium heat.
  11. Add the spinach puree to the saucepan and stir gently.
  12. Mix in the remaining half of the cornstarch mixture, stirring until the spinach soup thickens.
  13. Pour the spinach mixture into the empty side of the serving bowl, next to the corn mixture.
  14. Use a knife or skewer to gently swirl the two purees at the center to create a yin-yang design, being careful not to mix the colors entirely.
  15. Serve the soup immediately while warm.

Note

For best results, use fresh spinach for a vibrant green color. If using frozen spinach, thaw and squeeze out excess liquid before blending.

Ensure the cornstarch mixture is well-mixed before adding it to the hot purees to prevent lumps.

This soup is best served immediately. If stored in the refrigerator, the purees may separate; reheat gently on the stove, stirring occasionally, before serving.

For a richer flavor, you can substitute vegetable broth for the water.
