Ingredients

Directions

  1. Season the 4-pound boneless chuck roast with salt.
  2. In a heavy 4-quart pot, heat oil and butter over medium-high heat.
  3. Brown the beef roast on all sides until golden brown.
  4. Add the sliced onion to the pot and cook until softened.
  5. Add the stewed tomatoes and prepared horseradish to the pot.

  8. In a small bowl, dissolve the flour in the cold water.
  9. Ladle 2 tablespoons of hot cooking drippings into the flour mixture and blend well to create a slurry.

Note

Ensure the beef roast is fully browned before adding liquids to develop a deeper flavor base.

If the gravy is too thick, add a splash more water or beef broth. If too thin, simmer longer or add a bit more flour slurry.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.

For a milder flavor, reduce the amount of prepared horseradish or mix it with a little sour cream before adding.
