  1. Preheat canola oil or equivalent cooking oil in a deep fryer or heavy pot to 370°F (190°C). Add a few drops of sesame oil for extra flavor.
  2. In a medium bowl, sift together 1 cup flour, 1 teaspoon baking powder, and 1/2 teaspoon salt.
  3. Beat 1 whole egg and 1/2 cup beer (Pilsner Urquell or Martiner recommended) into the dry ingredients until a smooth, slightly lumpy batter forms.
  4. Dip your chosen nuggets (chicken, shrimp, potato, etc.) into the batter, ensuring they are well-coated.
  5. Carefully place battered nuggets into the hot oil. Fry until golden brown and crispy, about 3-5 minutes depending on size.
  6. Remove nuggets and drain on paper towels. Keep warm in a low oven while preparing the sauce.
  7. In a small saucepan, mix 1 tablespoon cornstarch, 1 tablespoon sugar, 1 teaspoon salt, and 4 tablespoons vinegar.
  8. Add 1/2 cup pineapple juice and 1 cup pineapple chunks to the saucepan.
  9. Cook over low heat, stirring steadily, until the sauce thickens and bubbles slightly.
  10. Arrange the fried nuggets on a serving dish, top with pineapple chunks, and pour the sweet-and-sour sauce over all.

Optional Nugget Ingredients: You can use raw shrimp (shelled and deveined), chicken or turkey breasts (skinned and deboned, cut into nugget sizes), turkey or chicken thighs, large peeled potatoes cut into 3/16 inch thick slices, sweet potatoes, mushroom caps, Bermuda onion rings, cauliflower, or broccoli heads.

One pound of nuggets will yield approximately 4-6 servings.

Use a good thermometer to ensure the oil stays at 370°F for the crispiest results.

The sauce works best with chicken or shrimp, but can be served alongside vegetable nuggets as well.
