Directions
-
Preheat oven to 375°F (190°C).
-
In a large bowl, whisk together the flour, sugar, poppy seeds, cream of tartar, baking soda, and salt.
-
Cut the cold butter into the flour mixture using a pastry cutter or two forks until the mixture resembles coarse cornmeal with some pea-sized pieces remaining.
-
In a small bowl, lightly beat the egg and mix it with the orange juice and orange peel.
-
Pour the liquid mixture into the dry ingredients and gently stir with a fork until the dough just begins to come together. Do not overmix.
-
Turn the dough out onto a lightly floured surface and gently pat it into a ball. Cut the ball in half and pat each half into a circle about 1/2 inch thick and 8 inches in diameter.
-
Cut each circle into 4 wedges to make 8 scones total. Place them on an ungreased baking sheet.
-
Bake for 15 to 20 minutes, or until the scones are golden brown on top and cooked through.
Note
For best texture, keep the butter cold until it is cut into the flour.
These scones are best served warm. They can be stored in an airtight container at room temperature for up to 2 days.
Substitute fresh orange zest for the orange peel if desired for a brighter flavor.
