This Helen’s Apple Coffee Cake is the ultimate comfort food for lazy weekend mornings. It features a moist, tender crumb enriched with sour cream, studded with tender slices of fresh apple that soften beautifully during baking. The real star is the dual-layered topping: a crunchy, buttery streusel made with brown sugar, cinnamon, and nuts that sits both beneath and above the apple layer. The result is a perfect balance of sweet, tart, and nutty flavors with a delightful textural contrast between the soft cake and the crisp crust. It’s incredibly easy to make, requiring just one bowl for the batter, and it pairs perfectly with a steaming cup of coffee or tea. Ideal for brunches, potlucks, or simply treating yourself to a slice of homemade heaven.

Description

This Helen’s Apple Coffee Cake is the ultimate comfort food for lazy weekend mornings. It features a moist, tender crumb enriched with sour cream, studded with tender slices of fresh apple that soften beautifully during baking. The real star is the dual-layered topping: a crunchy, buttery streusel made with brown sugar, cinnamon, and nuts that sits both beneath and above the apple layer. The result is a perfect balance of sweet, tart, and nutty flavors with a delightful textural contrast between the soft cake and the crisp crust. Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, and baking powder. Gradually add this dry mixture to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture. Mix until just combined.
  5. For the topping, mix the brown sugar, white sugar, cinnamon, and chopped nuts in a small bowl. Set aside.
  6. Spread half of the batter evenly into the prepared baking pan.
  7. Arrange the sliced apples in a single layer over the batter. Sprinkle half of the cinnamon-nut topping over the apples.
  8. Spread the remaining batter over the apples and topping. Sprinkle the remaining topping evenly over the top layer.
  9. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before slicing and serving.

Note

Storage: Store covered at room temperature for up to 3 days, or refrigerate for up to 5 days. Warm slices slightly before serving for best texture.

Substitutions: You can use walnuts, pecans, or almonds for the nuts. Greek yogurt can replace sour cream for a tangier flavor.

Variations: Add a teaspoon of nutmeg to the topping for extra spice, or drizzle with caramel sauce before serving.
